CHEWY OATMEAL COOKIES 
1 c. self-rising flour
2 eggs
3/4 c. shortening
1 tsp. cinnamon
2 c. uncooked minute oats
1 1/3 c. sugar (1/2 brown, 1/2 white)
1 tsp. vanilla
1 c. raisins, cut into sm. pieces

Cream sugar, eggs, shortening. Add cinnamon, vanilla and then raisins. Add flour and mix well. Add oats. Drop by rounded teaspoons onto greased cookie sheet. Bake at 325-350 degrees for 12 minutes or so until edges are brown. Let cool completely.
