CHEWY OATMEAL COOKIES 
1 c. sifted all-purpose flour
3/4 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
3/4 c. shortening, softened
1 1/3 c. brown sugar
2 eggs
1 tsp. vanilla flavor
2 c. oats
1 c. raisins
1 c. chopped nuts (optional)

Sift together flour, baking soda, salt, cinnamon and nutmeg into a bowl. Add shortening, sugar, eggs, and vanilla. Beat until smooth, about 2 minutes. Stir in nuts, if desired, and raisins. Drop heaping teaspoonfuls onto greased cookie sheets. Bake in preheated 350 degree oven for 12 to 15 minutes. Makes 3 to 3 1/2 dozen.
