BAKED SCALLOPS 
1 qt. (2 1/4 lbs.) bay scallops
1 c. breadcrumbs
2 tbsp. grated cheese
1 c. cream sauce
Salt and pepper
4 tbsp. butter
4 tbsp. flour
1 c. milk
1 c. light cream
1/4 tsp. white pepper

Cream sauce: melt butter over low heat. Blend in flour. Add milk gradually. Stir until thick and smooth. Add cream and simmer 5 minutes to cook flour. Season with salt and white pepper. Wash and cover scallops with cold water. Heat slowly to boiling point. Alternate scallops and breadcrumbs in buttered baking dish. Sprinkle with salt and pepper. Add cream sauce, sprinkle with breadcrumbs and cheese. Bake for 1/2 hour at 375 degrees.
