BAKED FISH OR SCALLOPS 
1 lb. fish, cut into bite-size pieces
1/2 c. crushed Ritz crackers
1/2 c. Italian flavored bread crumbs
1/2 c. melted butter
1/2 c. light cream

(OR - 1 pound scallops cut into bite-size pieces).

For low fat, low salt version, use more fish and less crackers and butter; use skim milk instead of light cream).

Grease a 9 x 13 inch pan. Mix crackers and bread crumbs. Spread 1/2 of crumb mixture in pan. Place fish (scallops) over crumbs. Place rest of crumbs over fish. Pour butter-cream over crumbs. Bake at 350 degrees for 1/2 hour.
