ALMOND CHICKEN 
1/3 c. tamari sauce or soy sauce
1 tsp. ground ginger
1 tsp. garlic powder or fresh mashed garlic
3 lbs. chicken, skinned and boned
1/2 c. whole wheat flour
1/2 c. finely chopped almonds
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. peanut oil

In a large bowl, combine tamari sauce, ginger and garlic. Cut chicken into bite size chunks and marinate it in the tamari sauce mixture while preparing the other ingredients.

In another bowl, combine the flour, almonds, salt and pepper.

Heat oil in a wok or large saucepan on high heat. When oil is hot, coat the chicken pieces with the flour mixture and add to the wok.
