CHICKEN ALMOND PUFFS | |
1/2 c. sifted all-purpose flour 1/8 tsp. salt 1/4 c. butter 1/2 c. chicken broth 2 eggs 1/2 c. finely chopped cooked chicken 2 tbsp. chopped toasted almonds Dash of paprika Sift flour with salt. Combine butter and chicken broth in saucepan and cook over simmer flame until butter is melted. Add flour all at once and stir vigorously over low flame until mixture forms a ball and leaves sides of pan. Turn out flame. Add eggs, one at a time, and beat thoroughly after each addition. Continue beating until thick dough is formed. Stir in chicken, almonds, and paprika. Drop by teaspoons onto greased cookie sheet. Bake at 425°F for 17 minutes. Makes about 3 dozen puffs. |
