ERIN'S CRISPY POTATO PATTIES 
A great way to use your leftover mashed potatoes!

leftover mashed potatoes
1 egg
Panko (Japanese bread crumbs)
flour, as needed
5 tbsp. olive oil, to fry

Combine egg into the mashed potatoes and mix. Add flour if needed to thicken. Roll potato mix into ball then coat with Panko. Use a skillet to fry with 5 tablespoons of olive oil.
