SHEPHERD'S LEFTOVER TURKEY PIE 
1 cup cubed or shredded cooked turkey
1/2 cup chopped onion
2 cloves garlic, minced
1 (15 oz.) can peas, drained
2 cups mashed potatoes (leftovers work great!)
1 (18 oz.) jar turkey gravy (or to taste from leftovers)
salt and pepper, to taste

In a sauté pan on medium heat, soften chopped onion and garlic (about 3 minutes). Season with salt and pepper. Stir in gravy. Let simmer for about 3 minutes. Add peas. Add turkey. Let simmer.

In casserole dish line the bottom and sides with mashed potatoes. Pour the turkey mixture into the casserole dish. Cover the top with mashed potatoes. Run fork over top to create lines for decoration.

Put casserole dish (uncovered) in the broiler until the top is browned and crunchy.

Variation: Top with your choice shredded or grated cheese if so desired.
