VANILLA CREAM PUDDING | |
1/2 c. sugar 1/8 tsp. salt 1 egg, well beaten 2 tsp. vanilla extract 2 tbsp. cornstarch 2 c. milk 2 tbsp. butter 1. In a 1 1/2-quart glass bowl, combine sugar, cornstarch, and salt. Gradually add milk, stirring until completely smooth. Microwave uncovered, at power level 7 for 8 to 9 minutes, or until bubbly and thickened, stirring 3 times. 2. In a separate bowl, beat egg with about 2/3 cup of the hot pudding mixture. Quickly stir warmed egg mixture into bowl containing remaining pudding. Microwave, uncovered, at power level 7 for 2 to 3 minutes, or until mixture thickens enough to coat a spoon, stirring every minute. Add butter and vanilla extract stirring until butter melts. Refrigerate until serving. Makes 4 servings. |
