CHEESY BEER AND VEGGIE SOUP 
1 1/2 c. diced potatoes
3/4 bag frozen mixed vegetables
2 c. water
6 chicken bouillon cubes
1 c. chopped onion
1/4 c. butter
2 c. milk
1/2 c. flour
3 c. shredded Cheddar cheese
1/8 tsp. cayenne pepper
1/2 c. beer

In large saucepan, combine bag of vegetables, potatoes, bouillon, onions and butter. Bring to a boil. Reduce heat. Cover and simmer 20 to 30 minutes or until vegetables are tender.

In a small bowl, combine milk and flour. Beat until smooth. Blend into vegetable mixture. Add cheese and cayenne. Cook and stir until cheese melts. Stir in beer. Heat through.
