CHOCOLATE POTATO SPICE CAKE 
1 3/4 c. sugar
2 c. flour
2 tsp. baking powder
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. allspice
1/2 c. cocoa
1/2 tsp. salt
7/8 c. shortening
1 c. mashed potatoes
1/2 c. milk
2 eggs, unbeaten
1/2-1 c. walnuts, optional

1. Mix and sift dry ingredients into mixing bowl, reserve a little flour if nuts are used.

2. Add shortening, potatoes and milk.

3. Beat 2 minutes with mixer slow to medium speed scrape sides and bottom of bowl.

4. Add eggs.

5. Beat 2 minutes more.

6. Fold in chopped nuts, dredge in reserved flour.

7. Turn into two 8 inch round pans or 8 x 12 inch pan. Bake at 375 degrees for 35-40 minutes for 8 x 12 inch pan. 25-30 minutes for round pans.
