PEANUT BUTTER BALLS | |
1 lb. butter 1 lb. (12 oz.) peanut butter 3 boxes confectioners' sugar 2 lg. pkgs. semi-sweet chocolate chips 3/4 bar paraffin wax Blend butter, peanut butter, and sugar by hand, then by electric mixer. Take about 1/8 of mixture and knead by hand until smooth. (Keep remaining mixture that you are not working with covered up to keep from drying out.) Roll into 1 inch balls and put onto wax paper on cookie sheet. Melt chocolate chips and wax in double boiler. Dip peanut butter balls into chocolate with a toothpick. Make sure you cover completely with chocolate to keep candy from drying out. Take a small spoon and dribble a little chocolate into the hole left by the toothpick. Store in refrigerator overnight, then freeze. |
