NORTHERN "FRIED" CHICKEN 
1 1/2 c. packaged stuffing mix
1/3 c. grated Parmesan cheese
1 1/2 tsp. seasoned pepper
1/2 tsp. garlic powder
1 broiler-fryer (about 2 1/2 lbs.), cut up
1/2 c. (1 stick) butter, melted

Crush stuffing mix with rolling pin to fine crumbs. Combine with cheese, pepper and garlic powder on wax paper.

Dip chicken pieces first in melted butter, then in crumb mixture. Arrange, skin side up, in either a 9x13x2 inch baking pan or a jelly roll pan that has been brushed with butter remaining from dipping chicken.

Bake in a moderate 350 degree oven for 1 hour or until browned and tender. Crunchy and good tasting, and no frying! Makes 4 servings.
