FRIED CHICKEN VIENNESE 
1 med. onion, chopped
1 sm. clove garlic, crushed
6 tbsp. olive oil
1 tbsp. salt
1/4 tsp. black pepper
1 tbsp. lemon juice or vinegar
1 tsp. sugar
1/2 tsp. paprika
1 chicken, about 3 lbs., cut up
1 c. dry bread crumbs, mixed with 2 tsp. salt
1 egg, beaten, mixed with 2 tbsp. water
4 tbsp. shortening

1. Combine first 8 ingredients and mix thoroughly. Marinate chicken pieces in mixture for about 3 hours.

2. Drain chicken. Dip chicken pieces in bread crumbs and then in egg, then dip again in bread crumbs.

3. Fry chicken in deep fat. As soon as chicken is light brown, remove. Place in a baking dish and bake in a preheated oven at 375 degrees for 50 to 60 minutes.
