OVEN FRIED CHICKEN 
1 (2 1/2 to 3 1/2) lb. broiler chicken, cut up
1 c. evaporated milk
2 c. corn flake crumbs, crush in plastic bag
1 1/2 tsp. salt
1/4 tsp. pepper
1/4 c. cooking oil

Wipe chicken dry. Dip in evaporated milk and then dip into crumbs that have been mixed with salt and pepper. Place in 9 x 13 inch baking dish that has been coated with oil. Bake in 375 degree oven, uncovered, 1 hour or until tender. Do not turn during cooking.
