DOUBLE CHOCOLATE OAT COOKIES 
1 (12 oz.) pkg. semi-sweet chocolate pieces, divided (about 2 c.)
1/2 c. butter, softened
1/2 c. sugar
1 egg
1/4 tsp. vanilla
3/4 c. all-purpose flour
3/4 c. Quaker oats, uncooked
1 tsp. baking powder
1/4 tsp. salt (optional)
1/4 tsp. baking soda

Heat oven to 375 degrees. Melt 1 cup chocolate pieces in small saucepan; set aside (or melt in microwave).

Beat butter and sugar until fluffy; add melted chocolate, egg and vanilla. Add combined flour, oats, baking powder, salt and baking soda; mix well. Stir in remaining chocolate pieces.

Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 8-10 minutes. Cool 1 minute on cookie sheet; remove to wire rack.
