HAM-RICE CASSEROLE 
Diced green pepper, red pepper and onions = 1 c.
1/2 c. chopped green or black olives
4 c. cooked white rice
1 1/2 c. leftover boiled ham, cubed (sm. pieces)
1 1/2 c. grated sharp cheddar cheese

Saute peppers/onion mixture. Steam ham to temperature. Add all ingredients together and pour into buttered casserole dish. Top with cornflake crust. Bake at 350 degrees for 1/2 hour or until hot. Serves 4-6.
