PET RITZ PIE 
3 egg whites
1 c. sugar
20 Ritz crackers
1 tsp. vanilla
1 c. chopped pecans

Roll crackers and mix with nuts. Beat egg whites and add sugar slowly. Add vanilla and beat stiff. Fold in pecans and crackers. Bake in well buttered pie pan 30 minutes at 350 degrees. Let cool in pan. Beat 1/2 pint whipping cream and 2 tablespoons sugar, spread over pie and let stand several hours in refrigerator before serving. Serves 6.
