JEANNE'S CHEESE CAKE 
2 (8 oz.) cream cheese, at room temperature or softened
1 pt. sour cream
1 tsp. vanilla
1 c. sugar
4 eggs

Cream sour cream and cream cheese together. Add eggs and sugar and vanilla. Mix until well blended. Beat thoroughly.

Make crust, recipe follows.

Place crust in bottom of spring pan and press down. Add drained crushed pineapple or other fruit. Pour cheese mixture over. Bake at 400 degrees until light brown. Turn off oven and leave cake in oven for 15-30 minutes. Open door of oven, leave cake inside until completely cooled.

GRAHAM CRACKER CRUST FOR CHEESE CAKE:

2 tbsp. sugar
2 1/2 c. (1 pkg.) graham crackers, crumbled fine
5 1/2 tbsp. butter

Combine above ingredients and use as a shell to bake cheese cakes or other.
