PEACH CAKE | |
2 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 3 eggs 1 3/4 c. sugar 1 c. vegetable oil 2 c. sliced peaches 1/2 c. chopped pecans Combine 1 1/2 cup flour, soda, salt and cinnamon. Mix well and set aside. In separate mixing bowl, combine eggs, sugar and oil; beat until smooth. Add the flour mixture to the egg mixture. Dredge peaches and pecans in the remaining half cup of flour and gently fold into batter. Bake at 375 degrees for 50 minutes in a greased and floured 13 x 9 pan. Serve warm with whipped topping. |
