PRIZE WINNING TENNESSEE PUMPKIN
BREAD
 
1 2/3 c. sifted regular flour
1/4 tsp. baking powder
1 tsp. baking soda
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/3 c. shortening
1/3 c. sugar
1/2 tsp. vanilla
1 c. canned mashed pumpkin
1/2 c. walnuts or pecans; optional
2 eggs
1/3 c. water

Bake in greased loaf pan 45-55 minutes at 350 degrees. Freeze while still warm. Double the recipe and make 2 loaves, using the whole can of pumpkin.
