“BUTTER COOKIES” IS IN:

BUTTER COOKIES 
1 lb. butter
1 1/2 lbs. all-purpose flour
1/2 lb. sugar
2 egg yolks
1 tbsp. Brandy
1/4 lb. blanched and ground almonds
1/8 c. chopped citron (about 2 tbsp.)

In a mixing bowl, combine butter, flour and sugar, egg yolks, Brandy, almonds and citron. Roll the cookies out on a lightly floured board to 1/4-inch thickness.

Cut out with cookie cutters and bake in a 350°F oven until they reach a light yellow color.

Note: You can brush these with the whites of eggs or heavy cream and dust them with plain or colored sugar, cinnamon or almonds before baking.
