COWBOY CORN BREAD 
2 c. cornmeal mix
1 egg
1 1/3 c. milk
1/4 c. oil
4 jalapeno peppers, sliced
1 large onion, chopped
1/2 c. grated Cheddar cheese

Preheat oven to 350°F. Put oil in cast-iron skillet. Combine cornmeal mix, egg, milk and oil in bowl and blend together. Pour half in skillet. Add peppers, onion and grated cheese. Add rest of corn bread and bake 25 minutes.
