MEXICAN CORN BREAD CASSEROLE 
1 c. corn meal
2 eggs, well beaten
1 c. milk
1/2 tsp. baking soda
1 tsp. salt
1 can cream style corn
1 med. chopped onion
4 jalapeno peppers, chopped
1 lb. grated cheddar cheese
1 lb. ground beef

Brown meat and drain. Grease iron skillet or casserole dish. Mix corn meal, eggs, milk, soda, salt and creamed corn together. Pour half of this corn meal mixture into the hot greased iron skillet. Then add meat and a layer of cheese. Sprinkle on onion and peppers. Add the rest of the corn bread mixture. Bake at 350 degrees about 1 hour.
