ITALIAN CHEESECAKE 
3 lbs. ricotta cheese
2 tbsp. orange peel
2 tbsp. lemon peel
1 tsp. almond extract
6 eggs
1 1/2 c. sugar
1/4 c. flour

Mix all ingredients in a large bowl. Beat with electric mixer until blended. Pour into greased 9" or 10" spring form pan. Bake at 350 degrees for 50 to 60 minutes until center is firm and top lightly brown. Best when made a day before serving.
