CARROT CAKE 
4 eggs
2 lg. jars baby carrots (Jr. baby food)
2 c. sugar
2 c. flour
1 c. oil
2 tsp. baking soda
2 tsp. baking powder
1 1/2 tsp. cinnamon
1/2 c. nuts

Preheat oven to 300 degrees. Cream oil and sugar. Add eggs and beat. Add carrots and beat. Sift flour, soda, baking powder. Mix in cinnamon. Add flour mixture to cream mixture. Mix well. Pour into greased 13x9 pan. Bake 80-90 minutes.

FROSTING FOR CARROT CAKE:

1 lb. powdered sugar
1/4 lb. soft butter
1 (8 oz.) cream cheese
1 tsp. vanilla

Combine all ingredients. Mix well and spread on cool carrot cake.
