TART APPLE CAKE 
3 eggs
1 c. oil
2 c. sugar
2 c. flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
4 c. tart apples, thinly sliced pared (Granny Smith is good)
1 c. walnuts
Cream cheese icing
Additional apples slices for garnishing

Preheat oven to 350 degrees. Beat eggs until thick and light. Mix sugar and oil; pour into eggs, mix on medium speed. Stir flour, cinnamon, baking soda and salt; add to egg mixture. Add vanilla and beat until well mixed. Stir in nuts. Spread sliced apples in 13x9x2 greased pan. Pour mixture over apples, spread to cover. Bake 1 hour. Remove from oven; cool.

ICING:

2 pkgs. (3 oz.) cream cheese, softened
2 c. confectioners' sugar
1 tsp. lemon juice
1/4 c. melted butter

Beat cream cheese until fluffy. Beat butter; beat sugar with lemon juice. Frost and refrigerate until ready to serve. Top with apples for garnish. Yields: 12 to 15 servings.
