CRANBERRY-APPLE MUFFINS 
1 c. flour
1/2 c. oatmeal
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1 egg
3/4 c. dark brown sugar
1/4 c. melted butter
1 tsp. vanilla
3/4 c. diced unpeeled tart apple
3/4 c. fresh or frozen cranberries
1/4 c. raisins

Mix flour, oats, baking powder, salt and cinnamon in a large bowl. In another small bowl, break egg, add sugar and whisk until smooth. Whisk in butter and vanilla, stir in apples, cranberries and raisins. Pour over dry ingredients and fold in just until dry ingredients are moistened. Pour into 12 greased or lined muffin pan. Bake 20 to 25 minutes in a 350 degree oven.
