LENTIL LOAF 
3 c. water or stock
1 c. lentils
2 c. rolled oats (or cornmeal)
1/4 c. soy flour
1/4 c. oil
1-2 beaten eggs
1 sm. onion, chopped
1 clove garlic, minced
Daily supplements as recommended (except for oil)
1/4 c. tomato sauce or sugarless ketchup (opt.)

Slowly add lentils to boiling water or stock and simmer 20 minutes. Add oats and soy meal and let soak 10 minutes. Mix in the rest of the ingredients and turn into loaf pan. Top with ketchup or tomato sauce, if desired, and bake at 350 degrees for 30 minutes. Supplements may be pre-mixed into loaf or added when serving.
