LENTIL RICE CASSEROLE 
1 c. uncooked lentils
2 c. uncooked rice
2 cloves garlic, minced
1 tbsp. cumin
1 tsp. turmeric
1 1/2 tsp. salt
1 lg. onion, sliced thinly

Wash lentils. In large saucepan cool lentils in 5 cups water for 30 minutes. Add uncooked rice, garlic, cumin, turmeric, salt bring to a boil. Pour into covered casserole and bake 350 degrees until rice is cooked, about 30 minutes.

Saute onions in olive oil or other vegetable oil until almost crisp. Spread over casserole and serve. Slice tomatoes or a green salad to complete this meal.
