WHOLE WHEAT BREAD 
1 pkg. dry yeast
1/4 c. warm water
1 1/2 c. hot water
1/3 c. brown sugar (may substitute honey)
2 tsp. salt
3 tbsp. shortening
2 c. whole wheat flour
3 or 3 1/4 c. white flour

Soften yeast in 1/4 cup water. Combine hot water, sugar, salt, shortening. Cool to lukewarm. Stir in yeast. Add 1 cup white flour and beat well. Add rest of flour gradually until dough is moderately stiff. Turn out on floured surface, knead 10 to 12 minutes. Shape in a ball.

Put in greased bowl. Cover. Let rise 1 1/2 hours in slightly warm oven (150 degrees) for 1 1/2 hours. Punch down, cut in 2 portions, shape in ball. Cover and let rise 10 more minutes. Then grease bread pans. Remove dough from oven, shape into loaves and let rise 1 1/4 hours in loaf pans. Bake at 350 degrees for 40 to 45 minutes. Cover with foil last 20 minutes if do not want top to be brown. Rub top with butter soon as take from oven to prevent hard crust forming. Makes 2 loaves.
