FLORENTINE CUPS OR SPINACH PIE 
1 1/2 c. shredded cheese
10 oz. spinach, chopped
3 tbsp. flour
4 oz. can mushrooms
3 eggs, slightly beaten
6 slices bacon
2/3 c. mayo
1/2 tsp. salt
Dash pepper

FLORENINE CUPS:

3 eggs, slightly beaten
2/3 c. flour
1/2 tsp. salt
1 c. milk

FLORENINE CUP: Combine eggs, flour, salt and milk; beat until smooth. Let stand 30 minutes for twelve cups. Pour 2 tablespoons batter into hot lightly greased 8" skillet. Cook on one side. Set in greased muffin.

FILLING: Toss cheese with flour, add remaining ingredients. Mix well. Fill cups.

For Pie: just use pie shell. Bake at 350 degrees for 40 minutes. Garnish with bacon.
