PIMENTO CHEESE SPREAD | |
1/2 lb. sharp Cheddar cheese 1 sm. can evaporated milk 1 sm. jar chopped pimento (drain off most of the juice) Salt & paprika to taste Grate cheese and add milk, pimento, salt and paprika. Cook in a double boiler. Melt slowly, stirring occasionally. Pour in container and store in refrigerator. |

8oz pkg finely grated sharp Cheddar cheese
8oz cream cheese
1/3 cup mayo
1/2 ts red pepper (optional)
1/4 ts garlic powder (Optional)
6 oz chopped pimentos or roasted red peppers
soften cream cheese slightly in microwave
add cheese, mayo, red pepper, garlic powder
mix with electric mixer until well blended
Add chopped peppers and mix well again.
Will spread well after refrigerated.
