PIMENTO CHEESE SPREAD 
12 oz. to 16 oz. Cheddar cheese (medium sharp)
1/3 c. mayonnaise or salad dressing
2 to 3 tbsp. dill or sweet pickle juice
4 oz. jar pimentos

Let cheese be at room temperature. Grate or mash in large mixing bowl. Mash or grated pimentos. Mix with cheese, mayonnaise, and pickle juice. Stir until fluffy and spreadable. Use for sandwiches or dip.
