RITA'S HEARTY SPLIT PEA SOUP 
1 c. dried green split peas
5 c. water or ham stock
1 c. dried celery
1 grated carrot
1 grated onion
1/8 tsp. thyme
1/8 tsp. marjoram
1/8 tsp. pepper
Dash of cayenne pepper
1/2 bay leaf, crushed
1 tsp. salt (optional)

Combine all and boil 20 minutes. Reduce heat; simmer 1 1/2 hours. Strain thoroughly in colander or serve with ham bits. If made with water; add 2 tablespoons butter.
