APPLE FILLED CRUMB CAKE 
2-1/4 cups biscuit mix
3 tablespoons sugar
1 egg
1 cup sour cream
2 teaspoons grated lemon peel
1 apple pared, quartered, cored and thin sliced

Preheat oven to 400°F.

Grease 9x9x2 inch square pan; set aside. Combine biscuit and sugar; set aside. Beat eggs, blend in sour cream and lemon peel; add to dry mixture. Stir until moist. Spoon into prepared pan. Arrange apple slices over batter.

Crumb Topping:

1/3 cup biscuit mix
2 tablespoons butter
3 tablespoons sugar
1/2 teaspoon cinnamon

Combine top ingredients until crumbly. Sprinkle crumb on top of apples.

Bake in a preheated 400°F for 20 minutes.

Not overly sweet, very moist and fluffy texture. The lemon zest is a surprise and is very refreshing. I think I will, next time, push the apples into the batter which is like a bread dough. I thinly cut the apple, as the recipe called for, and wish it had more apple so I'll use 2 apples and slice them a little thicker. Also, pecans or Walnuts would of been a nice addition to the crumble topping. I would recommend this quick recipe.
