JACKI'S RICE - BROCCOLI
CASSEROLE
 
2 pkgs. frozen chopped broccoli
1 c. rice
1 (8 oz.) Cheese Whiz
1 can cream of mushroom soup, undiluted
Extra mushrooms (optional)
3/4 c. chopped celery
2/3 c. chopped green pepper
3/4 c. chopped onions
1 stick butter

Cook rice and drain. Add Cheese Whiz and soup (+ extra mushrooms) while still hot. Saute the chopped vegetables in the butter until transparent. Cook the broccoli until barely tender and drain. Combine rice, vegetables, and broccoli. Season to taste. Bake 1/2 hour in 350 degree oven. Cover with aluminum foil while baking so casserole will not dry out. This will make a 8 x 8 x 2 inch casserole. For 9 x 13 inch pan, double the recipe.
