DEVILED CRAB CAKES 
1/4 c. butter
1/4 c. flour
1/4 tsp. salt
1/4 tsp. white pepper
1 c. milk
2 c. crab meat
1/4 c. chopped onions
1/4 c. chopped celery
1 c. cornmeal & flour mix
Beaten egg
Oil for frying

First make white sauce: Melt butter in saucepan over low heat, blend in flour until smooth. Add seasoning, stirring until bubbly and smooth. Remove from heat, stir in milk. Return to heat, bring to a boil, stirring constantly. Boil 1 minute. If this isn't thick enough add more flour. Cool, add crab meat, onion and celery. Shape into patties or desired shape. Chill until firm. Beat egg roll cake sin egg then meal mixture. Fry in oil until brown.
