BANANA CAKE WITH CREAM CHEESE
FROSTING
 
2 1/4 c. cake flour (sift before measuring)
1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 c. sugar
1/2 c. butter
2 eggs
1 c. lightly mashed bananas
1 tsp. vanilla
1/4 c. yogurt or buttermilk

Sift cake flour before measuring; resift with baking powder, soda and salt. Cream sugar and butter; beat in eggs one at a time. Combine mashed bananas, vanilla and yogurt or milk.

Add the flour mixture to the butter mixture in 3 parts, alternating with the banana mixture. Stir batter after each addition until smooth. Bake in greased and floured cake pans or 9x13 pan about 1/2 hour at 350 degrees.

CREAM CHEESE ICING:

Beat 1/2 pound butter (2 cubes) until smooth. Add 1 1/2 pounds cream cheese, 2 cups powdered sugar, and 1 1/2 teaspoons vanilla. Beat until VERY smooth.

Ice cake with cream cheese icing between layers and fresh bananas between layers. Decorate with walnuts on top.
