YOGURT PUDDING | |
1/4 c. sugar 1 env. unflavored gelatin 1/2 c. milk (lowfat skim) 6 (1 inch) ice cubes 1 (8 oz.) carton lowfat yogurt (any fruit flavor) 2 tbsp. sliced almonds if desired Combine sugar and unflavored gelatin. In small saucepan heat milk just until boiling. Pour milk into blender container. Add well mixed sugar, gelatin mixture. Cover and blend 2 minutes to dissolve gelatin and sugar. Through hole in lid of blender, add ice cubes, one by one with blender running. Blend one minute more or until smooth. Add fruit flavored yogurt and blend until combined. Pour into small sherbet dishes. Sprinkle with almonds if desired. Chill during dinner. Makes 4 to 6 servings. This is a good dessert for children and those who want a nutritious light dessert. It maybe dressed up for company by putting whipped topping, almonds and a cherry on top. |
