6 sm. zucchini (1 1/4 lbs.)
18 sm. tomato slices, 1/4" thick
Olive oil flavored vegetable cooking spray
1/2 tsp. dried whole basil
1/4 tsp. freshly ground pepper

Cut each zucchini into 4 lengthwise slices, leaving slices attached on stem side. Fan slices out; place a tomato slice in a staggered pattern in each slice. Place in a 13"x9"x2" baking dish coated with cooking spray and sprinkle with basil and pepper. Cover and bake at 350 degrees for 20 minuets. Yield: 6 servings.
