4 c. cheese & garlic croutons 6 med. tomatoes, cored 6 tbsp. chopped parsley 3 tbsp. olive oil 1 tbsp. red wine vinegar Crush croutons to make crumbs. Vertically cut tomatoes into 6 sections without going completely through. In small bowl, combine crumbs, parsley, oil, and vinegar. Sprinkle mixture between slices. Serve immediately. |
