ZUCCHINI CASSEROLE 
1 1/2 lb. ground beef, brown and remove grease
4 heaping c. cubed zucchini, cook in boiling water for 5 minutes
2 tsp. minced onion
1 chopped green pepper, if desired
1 c. cooked rice
1 can cream of mushroom soup
1 pt. sm. curd cottage cheese
1/2 c. catsup

Mix above ingredients together and place in large baking dish, top with a layer of grated cheese. Bake in oven at 350 degrees for 45 minutes. Serves 12.
