CHEESY POTATOES 
4 1/2 whole boiled red potatoes
4 tbsp. butter
1 1/2 tsp. salt
1 c. half and half
1/2 lb. sharp cheddar cheese
1/8-1/2 tsp. onion powder to taste

Boil potatoes in skins until tender. Let sit in skins overnight in covered dish. Peel and grate the next day. Melt butter in saucepan. Add salt, half and half, and onion powder. When thoroughly heated, but not boiling, add cheese. When melted, pour over the grated potatoes and mix. Bake in casserole for one hour at 350 degrees.
