GROUND BEEF DIABLE WITH FRIED
NOODLES
 
1 lb. lean ground beef
1/4 c. sherry
2 tbsp. Sauce Diable for 1 tsp. Worcestershire sauce + 1 tsp. prepared mustard
1 tsp. salt
2 tbsp. cornstarch
1 c. oil for deep frying
4 oz. uncooked fine noodles
1/2 c. chopped onion
1/4 c. chopped green pepper
1 c. beef broth
2 tsp. cornstarch
2 tbsp. water
2-3 c. hot cooked noodles or rice

In a bowl, mix ground beef with sherry, Sauce Diable or Worcestershire sauce with mustard and salt and cornstarch. Heat oil in wok to 375 degrees, or until a 1" cube of bread browns in 50 to 60 seconds. Add fine noodles and deep fry for 3 minutes or until golden brown. Drain noodles and place in a deep dish. Pour oil from wok. Reserve 2 tablespoons oil and return to wok. Place wok over high heat. Add onion and green pepper. Stir fry for 1 minute. Add meat mixture. Continue cooking until meat is lightly browned. Add broth, stir in dissolved cornstarch in 2 tablespoons water and bring to a boil. Stir until slightly thickened. Pour over the fried noodles. Toss and serve with hot cooked soft noodles or hot cooked rice. Makes 4 to 6 servings.
