KATHRYN'S FISH | |
1 lb. fish fillets 2/3 c. all-purpose flour 1/2 tsp. salt 1/2 tsp. baking soda 1 tbsp. vinegar 2/3 c. water Pat fish dry with paper towels. Mix flour and 1/2 teaspoon salt. Mix baking soda and vinegar. Stir vinegar mixture and water into flour mixture; beat until smooth. Dip fish into batter; allow excess batter to drip into bowl. Fry 4 or 5 pieces at a time until brown, turning once, about 3 minutes. Drain on paper towels. Temperature for deep fat fryer, 375 degrees. |
