CREAM COCONUT - BANANA MUFFINS 
2 tsp. lemon juice
1/2 c. milk
1 tsp. baking soda
4 tsp. baking powder
1/2 tsp. salt
2/3 c. butter, softened
2/3 c. sugar
3 lg. eggs
1/2 c. cream of coconut
1 tsp. vanilla
3 ripe bananas, mashed (1 c.)
2 c. shredded Swiss cheese

Preheat oven to 375 degrees. Combine milk and lemon juice, set aside; sift flour, baking powder, baking soda and salt together. In large bowl cream butter and sugar with electric mixer. Add eggs, one at a time, beating well. Add cream of coconut, vanilla, bananas, milk mixture. Add flour mixture, blend just until moistened. Stir in cheese. Fill greased or paper muffin cups 1/2 to 2/3 full. Sprinkle with reserved cheese. Bake for 30 to 35 minutes. 2 dozen.
