PORK CHOPS CREOLE 
6 pork chops
1 c. diced celery
1/2 c. chopped onion
2 tsp. chili powder
1 lb. can red beans
1 lb. can corn
1 c. UNCOOKED rice
1 can condensed tomato soup
1 can water
1 1/2 tsp. salt
1 tsp. oregano
1/4 tsp. pepper
1/2 c. ripe olives

Brown chops. Remove from pan leaving 2 tablespoons drippings. Saute celery and onion until soft. Stir in chili powder. Cook 1 minute. Stir in beans WITH liquid, corn WITH liquid, rice, soup, water, salt, oregano and pepper. Mix well. Heat to boil. Pour into a greased 12 cup baking dish. Arrange chops and olives on top. Cover. Bake 1 hour at 350 degrees.
