CHICKEN SALAD 
5 c. chunked chicken or turkey
2 tbsp. orange juice
1-1/2 c. celery, sliced
11 oz. can mandarin oranges
13 oz. can pineapple tidbits
1 c. slivered almonds
1 c. mayonnaise
2 tbsp. oil
2 tbsp. red wine vinegar
1 tsp. salt
1-1/2 c. grapes
3 c. cooked UNCLE BEN'S® long - grain and wild rice, the 5 minute variety

Combine chicken, oil, vinegar, orange juice and salt. Chill several hours or overnight. Combine rice, mayonnaise and chicken mixture. Add celery, grapes, oranges, pineapple and almonds. Toss lightly. Chill well before serving on a lettuce leaf.
