BROKEN GLASS CANDY MINTS 
3 3/4 c. cane sugar
1 1/4 c. white syrup
1 c. water
2 tbsp. cinnamon oil
1 tbsp. red (vegetable) food coloring

Mix the food coloring and cinnamon oil. Arrange and grease the area to receive the very hot candy mixture. If you have a marble slab, it is best. You can use a large cookie sheet or flat piece of aluminum foil. What ever you use, it should be something that can tolerate much heat as well as not be ruined by the sharp edges of the cooled candy. Remember, also, that the counter top may receive much heat. So it must be protected. All this needs to be done before the candy is cooked. At the HARD ROCK stage, the candy will try to stay in the pan and must be flavored and poured out quickly.

Mix the first 3 ingredients and slowly boil until it reaches the HARD ROCK stage. If you with the candy to be clear, and not caramelized (tan), you must bring it to this stage slowly. HARD ROCK stage is 310 degrees.

In a well-ventilated space, quickly mix the color and oil into the very hot candy. You may get some of the oil on your hands from the bottle, or fumes off the very hot candy. CARE MUST BE TAKEN TO NOT TOUCH YOUR FACE UNTIL YOU HAVE WASHED YOUR HANDS WITH SOAP. Quickly pour the hot mixture onto the flat cooling area and spread it to desired thickness. While the candy is cooler, but can still be pressed thinner with firm pressure, cut lines in the surface of the candy. An oiled pizza wheel will do, if it is strong enough to allow firm pressure.

When the candy is cold, it will crack along the lines you made in the surface. If you store this candy now, it will stick together. You can sprinkle sugar over the layers. Another way is to grease the top surface of the candy while it is still warm enough to melt the oil.

Other flavors and colors can be used with experimentation. One good one is to use WINTERGREEN OIL and GREEN FOOD COLORING. The red and green mints go well with Christmas time. This oil MUST be FOOD flavoring.

There are flavorings that are mixed with alcohol. Example is one called MINT. It is a mixture of wintergreen and mint. BUT, the alcohol boils vigorously at the high temperature of the candy - therefore, you MUST remove yourself and the candy from any source of high heat or the fumes of the alcohol can and have caught fire (burned the hair off my arm once!).
